We offer cheese, dairy, plant-based food preparations and vegan alternatives. Our products combine Italian quality with the versatility the market demands, and range from traditional recipes to increasingly innovative formulations.

Made for your manufacturing systems. Our Research & Development team is on hand to develop perfect solutions for each individual customer, resolve technical issues related to production processes or the end product, and to develop new products in partnership.

CHARACTERISTICS OF THE END PRODUCT

All chemical and physical aspects which characterise the product’s sensory profile and performance in the end application are completely customisable:

  • appearance
  • firmness and elasticity
  • consistency: hard, soft or intermediate
  • texture when hot: creamy, paste-like or stretchy

CUSTOMISATION OF FLAVOURS

The IPAS R&D team develops 100% custom-made products which offer completely new and highly personalised sensory profiles, with no risk of overlap or changes to the end product,

using ingredients which reflect the quality and variety of the Mediterranean diet. At the same time, we at IPAS are committed to exploring new culinary horizons from all over the world in our quest to develop increasingly innovative formulations.

Cheeses used: Cheddar, Emmental, mozzarella, PDO Gorgonzola, PDO Parmigiano Reggiano, fontina, scamorza and mild or smoked provola, PDO provolone, raclette, Brie, PDO pecorino, caciocavallo, PDO taleggio, PDO Asiago, Gruyère, Edam, Tilsit, Gouda and others.

Other dairy products: ricotta, yogurt.

PRODUCTS WITH TRADITIONAL FLAVOURS

IPAS develops complex food preparations based on cheese, milk derivatives and plant-based ingredients, offering quality industrial versions of traditional and particularly popular flavours, formulated with the addition of ingredients such as:

  • cold cuts: ham, speck, mortadella, pancetta and salami
  • vegetables: mushrooms, tomatoes, radicchio, spinach, artichokes, peppers, asparagus, aubergine, courgettes, Trevisan radicchio, rocket, broccoli rabe, leeks, onions and garlic
  • herbs and spices, such as paprika, pepper, turmeric, thyme, ginger, basil, oregano, sage, rosemary, parsley and za’atar
  • pesto
  • olives, capers and sundried tomatoes
  • citrus fruits

CUSTOMISATION OPTIONS: STRUCTURE AND MELTING POINT

PRODUCT STRUCTURE WHEN COLD

The IPAS R&D department creates textures customised entirely to customer requirements, offering an unlimited range of possibilities.

HARD/COMPACT structure
Their elasticity makes these products ideal for all cutting operations, such as slicing, cubing, julienne, grating, etc. They can be processed more rapidly than traditional cheeses, with reduced or zero wastage.
MOULDABLE structure
Products with an intermediate-type structure, developed especially for use with moulding machines.
PUMPABLE structure
These products have a soft and malleable texture, ideal for industrial processes which require the product to pass through extruders or pumps.
CREAMY structure
Prodotti idonei al dosaggio in linea tramite ugelli. Products suited for lines using dosing nozzles. Can be mixed with water or other creamy matrices during processing.

MELTING POINT

Every product is formulated to give a degree of heat resistance tailored precisely to customer requirements.

HIGH melting point
The product does not run in the end application, becoming slightly creamy.
INTERMEDIATE melting point
The product melts at lower temperatures, giving the filling a superb creaminess.
LOW melting point
The product melts completely in the end application.
